Heat the water in a kettle or pan. Wash and roughly cut the apples into chunks. Pour the apples into a large jug, wash the mint leaves and add them to the apples. Put the 3 tablespoons of tea into a fine-mesh infuser, pour the water into the jug and add the infuser. Leave for 5 minutes, remove the infuser and add the honey.
Stir thoroughly and leave to cool. Place in the fridge for an hour and serve with ice cubes, slices of apple and a few fresh mint leaves.
