Boil the quinoa for (number of minutes indicated on the packet) and when cooked through drain thoroughly and leave to “lightly dry” so it isn’t too wet. Season with oil, salt and pepper and leave to cool.
Cut the apples into slices (or chunks).
Position the quinoa in the bottom of a bowl, crumble in the feta and add the apples, the chopped dates and the nuts.
Serve cold.
